【街頭小食】沙嗲雞肉串!道地南洋風味!香濃甜辣!讓你一串接一串!
用香料醃漬過得雞肉串,炭火炙燒後的香氣,與花生沙嗲醬沾食真的會一串接一串停不下來!
材料:
雞腿塊 600g
竹籤
香茅 2根
紅蔥頭 6瓣
蒜頭 2瓣
辣椒 1茶匙
薑黃粉 1茶匙
鹽巴 1/2茶匙
小茴香 1/2茶匙
棕櫚糖/黑糖 2茶匙
沙拉油 少許
甜醬油 1大匙 (沒有的話用薄鹽也可)
花生醬:
顆粒花生醬 2大匙
蒜頭 2瓣
紅蔥頭 3瓣
香茅 1根
鹽 1/4茶匙
黑糖 1大匙
油 少許
香菜(看個人)
椰奶 100cc
做法:
1. 竹籤先用水浸泡,燒烤時才不易變形。
2. 蒜頭、紅蔥頭、香茅用食物條理機或是搗臼搗碎磨成泥。
3. 雞腿肉去骨後切成好入口的小塊,與醃料混合抓醃過夜。
4. 將醃好的雞腿塊串起,待炭火稍熱,放在烤架上烤至兩面金黃。(如果用瓦斯爐的烤盤可以不用噴油雞皮面朝下煎,如果用雞胸肉就要先噴油)
5. 將紅蔥頭、蒜頭、香茅搗碎或用條理機攪碎,與剩餘花生醬材料混合倒入郭鐘炒香,全程以中小火不斷拌炒以免焦底。
6. 烤好的雞肉串可搭配小黃瓜片、洋蔥片沾食花生醬與香菜末。

Ayam means chicken in Malay, and Malaysia’s satay is scrumptious and definitely best in southeast asia region. Marinate chicken with wonderful herbs, grilled till charred, dip into that rich savory nutty peanut sauce, that will be your favorite chicken skewers ever!
Ingredients:
Chicken thigh 600g
Skewers
Lemongrass 2
Shallots 6cloves
Garlic 2cloves
Chili powder 1tbsp
Turmeric powder 1tbsp
Salt 1/2tbsp
Brown sugar 2tbsp (palm sugar preferred)
Cumin seeds 1/2tbsp
Oil
Sweet soy sauce 1tsp
For dipping sauce:
Peanut butter 2tsp
Garlic 2cloves
Shallots 3cloves
Lemmon grass 1
Salt 1/4tbsp
Brown sugar 1tsp
Oil
Coriander (optional)
Coconut milk 100cc
Method:
1. Soak skewers in water at least 1he, in case it gets break easily during grill.
2. Blend garlic, shallot, lemon grass with food processor or bash them with pestle and mortar.
3. Cut chicken into one bite size and marinate with ingredients overnight.
4. Thread chickens onto skewers and grill them until charred. (if you use grilled pan with stove, place chicken skin on bottom, if you use chicken breast, its better spray oil firt.)
5. Blend dipping’s ingredients, and use medium low heat fry sauce.
6. Serve with cucumber slices and onion, and chopping coriander with peanut dipping sauce.
