📣 📜材料:可作6個杯子蛋糕
奶油100g
黑糖100g
蛋1顆
燕麥奶120ml
香草精1茶匙
燕麥150g
泡打粉1/2茶匙
鹽1/4茶匙
肉桂粉1茶匙
薑泥1/2茶匙
眾香子粉1/4茶匙
做法:
1. 薑刮掉外皮後磨成薑泥。
2. 奶油室溫後跟糖打到乳化順滑,直接全蛋下去免分開打,但你如果要蓬鬆口感建議蛋白分開打發再混入。接著把燕麥倒入,這時候水分都會吸乾持續攪拌,辣辣的Jonny薑泥也加入,剩餘粉類倒進來一直喇一直喇會有一種寶寶副食品感覺就可以倒入模具,把空氣敲開,我喜歡水浴法所以都會在烤盤倒水,去烤即可。
👉烤箱的話預熱180,先放底層烤20分鐘,最後5分鐘放到上層上色。
3. 最後搭配淋醬或糖霜即可。
👉怕胖的糖霜可以改用優格+燕麥奶調節濃稠,就可以安心吃大口享受甜品囉❤

📣 📜 ingredients for 6 cupcakes:
Butter 100g
Brown sugar 100g
1 egg
Oat milk 120ml
Vanilla extra 1tsp
Oat flakes 150g
Baking powder 1/2tsp
Salt 1/4tsp
Ginger puree 1/2tsp
Cinnamon 1tsp
All Spices powder 1/4tsp
Method:
1. Blend ginger into puree.
2. Mix butter with sugar until smooth then add egg and keep mixing, if you want really fluffy texture, you can beat egg white till hard peak first, then add oat flakes and ginger puree and all, mix properly then pour into baking modes, know air out and pre heat for 180, bake for 20 min in lower layer then remove to top for another 5min, will bring brown color on top.
3. Serve with frosting.
👉I use yogurt and oat milk for frosting, tasted much lighter and also silky ❤
